I’ ve been meaning to write this post for quite sometime but GOODNESS does it get busy around here once fall sports and schools start up! Last year, in my quest for clean eating, I struggled to find a way to make my own pasta sauce. Sauce in a jar is usually full of unwanted ingredients and is expensive for us considering we are pasta LOVERS and eat it twice a week. At first, I would make homemade sauce using crushed tomatoes–better than sauce in a jar but again, it processed. So I went on a hunt to find a way to make my own sauce using fresh tomatoes. The criteria: had to be easy, delicious, and no canning involved. I don’t do canning. Also, I have no patience for cooking, peeling, and de-seeding the tomatoes. After much trial and error, I give you my Easy Homemade Tomato Sauce. You can use this right over your pasta or use it as a base for my creative sauces. Either way, it’s clean,easy, tasty, and better than anything you’ll find in the store. Hopefully, you can still find some fresh tomoatoes around your area and utlize this recipe to capture that essence of summer. Otherwise, be sure to tuck it away or pin it so it will be handy come next summer.
Fabulous and Fuss-Free– Fresh Tomato Sauce
Easy Homemade Tomato Sauce
8-10 large, organic tomatoes–Whole, washed and stems cut off
1 large white onion-peeled and quartered
4 cloves of garlic-smashed
1/4 C olive oil
Salt and pepper to taste
8-12 clean, freezer safe jars with lids
-Place all ingredients into a large 2qt crock pot.
-Cook on HIGH for 8 hours.
-After about 4 hours the tomatoes will start to soften and you and crush them in the crock pot with a spoon (this is not a necessary step)
-Once the full 8 hours of cook time is complete, allow sauce to cool slightly then carefully transfer crock pot contents into clean, freezer safe jars, leaving roon at the top for the contents to expand when frozen.
-Tighten lids and place in freezer for up to 6 months
Couple of things to note: First, the sauce will be more orange rather than red like a jar sauce–this is normal since you are not adding any food coloring. Second, the sauce will be thinner than you are probably used to seeing but like all clean eating changes you make, it will be an adjustment. But TRUST ME, the fresh taste of this sauce, is so worth it. Let me know if you try it and what you think!
